Blueberry Banana Protein Bread!

Soooo if you follow me on Instagram I’m sure you’re aware my banana bread attempts so far have been useless. Until one blessed day last week I absolutely NAILED the recipe and I’m buzzin off my little tush. BTW did you know that the amount of sugar in bananas increases the more ripe it gets?! Something about the starch in it..  my mind was blown to the fact I didn’t know that and also WHY lord just why. Stop trying to ruin fruit!!!

Anyway, you asked for the recipe.. so here it is!

Ingredients 

188g overripe banana (this was just two large mashed bananas)

125g jumbo oats (I used Mornflake)

40g whey protein (I used Icon Nutrition Cookies ‘n’ Cream)

16g dessicated cocounut

2 tsp baking powder

1 tsp Vanilla Extract

2 Eggs

110g natural yogurt (I used Onken)

45g blueberries

1 tbsp of cinammon (I love cinammon so went heavy on this, if not fussed use a tsp)

Method

It’s so simple- preheat oven to 170c.

Mash the bananas, and add the protein, oats, baking powder and coconut and mix with a fork.

In a separate bowl mix the eggs, yogurt and vanilla.

Then pour the wet mixture into the dry mixture, and mix together thoroughly.

Grease a banana bread pan, and pour the mixture into the pan. Then add your blueberries on top!

Cook for 31-35 mins (toothpick trick until it comes out clean)

The top should be slightly crunchy and the inside nice and moist! (hate that word sorry)
