Blueberry & Nutella Protein Muffins

Guys i’ve got my muffin mojo back!! But I swear as soon as I bake anything macro friendly they last about 2 days. It’s so hard not to stuff them all in your mouth in one go…

My besties at @Mornflake asked me to come up with a few recipes for WORLD NUTELLA DAY… today, the 5th Feb best day of the year (apart from Christmas day obvs I am Christmas Fairy 👼🏽) and so one of the recipes I went with was these macro friendly little muffins. The recipe serves 12, only 94 kcal’s per muffin (!!!!!), 9.9g carbs, 3.6g fat and 5.3 protein.

These are honestly so delicious, when you bite into them the little pocket of blueberry and nutella bursts and melts all up in yo’ mouth. Dribbleeeee 👅

INGREDIENTS

100g oats – I use Mornflake Superfast Oats

40g Protein – I used PHD Belgian Choc Lean Diet Whey

2 tsp Baking Powder

2 Medium Sized Eggs

75ml Dark Choc Almond Milk

110g Natural Yoghurt

1 tsp Vanilla Extract

50g Nutella

90g Blueberries

METHOD

Blend (I used my nutribullet) together the protein powder, oats and baking powder. In a separate bowl, mix together with a fork the eggs, yoghurt, milk and vanilla extract. Add the blueberries, and then combine the dry and wet ingredients together.

Fill 12 muffin cases to halfway with the batter. Then put a little bit of the Nutella in each of the muffins, on top of the mixture. With the remaining batter, fill up the cases. Cook for 18 minutes at 160c and enjoy!!
