Another creation using my beloved Mornflake oats, and this one for WORLD NUTELLA DAY! BEST DAY EVER. It was on Sunday in case you guys missed it.. you’re only a couple days late so might as well have it now ayyy?!
If I wasn’t on prep right now I’d sit and make pancake stacks with Nutella all day long but unfortunately I can’t do that… So instead, I’ll have a slice of this tasty banana bread that’s filled with Nutella swirls and topped with banana. That and a cuppa is the dream.
Super easy to make, serves 12 slices at only 137 cals for a very filling big slice! The macros are so good for a banana bread- 18.1g carbs, 5.6g fat, 3.8g protein (please note this isn’t a protein banana bread!) So don’t be expecting some major gainz from dis ok.
Enjoy this with a cup of tea, or top it with a cheeky little scoop of ice cream for dessert! (Wheyhey! have just sent me a load of their ice cream so I know what i’ll be having mine with teheeee)
130g Mornflake Jumbo Oats
200g Natural Yogurt
2 Eggs Whole
20g Light Brown Soft Sugar
20g Coconut Flour (I blended 20g of desiccated coconut to make a flour)
2tsp Baking Powder
2tsp Vanilla Extract
290g Banana (2 large banans) mashed! (50g for toppings)
Preheat oven to 175c.
Mix together the oats, sugar, coconut flour and baking powder. Don’t blend these, keep the oats oaty (not smooth, ya get me??)
Separately, mix together the eggs, vanilla, mashed banana and yoghurt.
Combine both the dry and wet ingredients. Then in a bread tin, evenly put in a bottom layer of batter using about 1/4 of the batter. Then using a little of your nutella (I melted it a bit so it dropped in easily), plonk a bit of nutella on top and use a knife to swirl it around. Then add another layer of batter, then nutella and do the same process, for about 3 layers. For the top layer do the same, and then add the 50g of banana on top, cut into pieces.
Cook in the oven for about 35-40 mins! I would check it at 32-35! Enjoy xo
