Strawberry Cream Banana Bread

HELLO HELLO! Hope you’re well little chicks 🐥  Easter is round the corner and I can’t wait! Because that means it’s spring time and spring is basically summer and summer means tans and holidays and BBQS. Although, I’ve not got a holiday booked yet, and I won’t be able to enjoy a BBQ properly until after the comp soo… at least I’ll be tanned & starving sitting in rainy London? Lols. Anyway enough waffling, I’ll get onto the recipe.

I was SO pleased because this recipe was spot on, tasted delicious and DIDN’T GET STUCK TO THE PAN. Finally!! This recipe is 145 calories per slice (serves 9 using my tin) but that’s including the thick protein topping so if you don’t want that, it’ll be even less!

For the bread

  • 100g Mornflake Oats
  • 180g Mashed Banana (2 large overripe bananas)
  • 40g Protein (I used Icon Nutrition Cookies ‘n’ Cream Whey)
  • 16g Dessicated Coconut
  • 115g Fage Greek Yogurt
  • 2 Eggs
  • 1 tsp baking powder
  • 1 tsp of vanilla extract
  • 1 tsp cinammon

For the topping

  • 165g Fage Yogurt (you could use less – it was a lot of mixture..)
  • 50ml Strawberry Ufit Protein Drink
  • 140g Strawberries
  • 1 tsp Xanthum Gum (optional) – it’s a thickening agent – I used it because I accidentally poured in too much UFIT whoops.


Preheat oven to 170c.

Mash the bananas, then add the protein, oats, baking powder, coconut and mix with a fork.

In a separate bowl mix the eggs, yogurt, cinammon and vanilla.

Then pour the wet mixture into the dry mixture, and mix together thoroughly.

Grease a non-stick banana bread pan (I didn’t use grease proof paper this time and it came out the pan much easier).

Pour half of the mixture into the pan. Cut half of the strawberries, and place them on top of the first half of the mixture. Then pour the remaining mixture on top.

Cook for 30 mins (toothpick trick until it comes out clean).

Whilst it’s cooling, mix together the yogurt, protein drink & Xanthum gum if you’re using it. Once the bread has completely cooled, spread the topping mixture over the bread & then top with the remaining strawbs!
